Lion



On NYE day my darling and I went to see this movie starring Dev Patel called Lion.

The movie is about a five-year-old Indian boy gets lost and ends up on the streets of Calcutta, thousands of kilometers from home. He survives many challenges before being adopted by a couple in Australia. 25 years later he sets out to find his lost family.

It is based on a true story and an amazing story. I really enjoyed this movie.
Everyone at the cinema was crying their eyes out while watching. It was very well made.
I can recommend this movie!!

Nye

I can still remember the first time I heard Missy Higgins, I got her cd as Christmas present. I had no idea who she was and what kind of music. However I loved it.
I got her debut album from our "relatives" in Aus.
Here's is a kinda new song, one of my fave from her latest album Oz.

8 Meat Pies Into Its Crust


Pizza Hut Australia has come up with a new dish on their menu...
Together Australian restaurant Four’N Twenty, Pizza Hut is offering a pizza with eight meat pies packed into the crust.
The pizza became available at Australian locations on May 26. We'll have to wait and see if this turns globally or only for Aussies to enjoy!

Ian Thorpe: The Parkinson Interview

I finally had time to see this interview, it was a really great interview to see and listen to.
Parkinson is kinda harsh while doing this interview, but I still think he is good at his work. I think it's only him and maybe Oprah who could make someone open up like this.
And I admire Ian for answering all these questions and explain himself so much.

I so need to read the book, it has been in my shelf for quite some time.
I read his "first" one from 2004, I even got it signed! That was like the happiest Christmas ever. (^^;;)

I always admired Ian Thorpe as an athlete and now I'd admire him even more as a regular person. I mean it's amazing how much he opens up, talk, and share about. If it was me, I'd refused this kind of interview.

Thanks Ian for sharing! I hope to see you in the pool again soon!

No Prove Bread with Butter and Raspberry Jam

I grew up in a bread loving country, so when I saw this on Masterclass the other week, it felt like a must try to bake. I just love Matt's recipes, a cheats way of cooking yet delicious.. what else do you need!? ^^
I can skip the butter and jam, possibly, but the bread I want to do!!
I hope I will have time this upcoming weekend.


Ingredients
Bread
1kg bread flour, plus extra to dust
1 tablespoon salt
1 tablespoon instant dried yeast
950ml lukewarm water

Raspberry Jam:
1kg frozen raspberries
800g caster sugar
¼ lemon, juiced

Butter:
300ml thickened cream
300ml sour cream
Salt, to taste


Method

Bread

1 For the bread, combine flour, salt and yeast in a large bowl. Stir in water until well combined. Cover with plastic wrap, then refrigerate overnight

2 Remove bowl from fridge 1 hour prior to cooking, and allow to come to room temperature.

3 Preheat oven to 220C.

4 Line two baking sheets with baking paper, and generously dust sheet with flour. Place half of the dough onto one tray and place in oven for 1 hour or until golden, and the inside sounds hollow when knocked on the base. Make rolls and a smaller long loaf with remaining half of dough. Bake in oven for about 40 minutes or until golden and hollow inside.

Raspberry Jam
1 For the raspberry jam, place raspberries and sugar in a saucepan set over medium heat. Cook mixture for 2 minutes, stirring until sugar dissolves. Add lemon juice and skin, and cook for about 20 minutes until thickened, and has reached a jam-like consistency, stirring regularly. Remove lemon skin and discard. Divide jam between 2 sterilised jam jars. The jam will set as it cools down.

2 Meanwhile, for the butter, place cream and sour cream into the bowl of an electric mixer, and whisk until mixture splits, separating butter from buttermilk. Drain through a colander. Pour iced water over butter to rinse off any excess whey. Transfer butter to a piece of baking paper, season with salt, and roll into a log. Refrigerated until needed.

3 Serve bread warm with homemade butter and jam.

Notes: Makes 1 large round loaf, 1 long loaf and 6 rolls.

Cola baked chicken

Here's a very weird dish I remember from Season 4 of MasterChef Australia.
I found it as I looked up the other recipe that I posted yesterday.
Sometimes I actually think Matt Preston's food is more amazing than George and Gary's just because it's simple and easy!
I'd never create something like this, I mean.. Coca-cola as main ingredient!?
But since it made the show, I should try it out ^^
I guess the sweetness of the coke will make a nice taste!!
I'll try to make this in the near future!!



Ingredients
750ml cola
1 cup firmly packed brown sugar
3 cloves garlic, grated
1 large brown onion, grated
2 tablespoons soy sauce
1kg chicken wings, cut at the joints
Juice of one lemon


How to cook
1. Preheat oven to 140°C fan forced.

2. Combine cola, sugar, garlic, onion and soy in a bowl.

3. Arrange chicken wings in a single layer in a deep oven tray and pour over cola mixture.

4. Bake for 3-3.5 hours or until sauce is thick and very sticky.

Beef pot roast

I'm a huge MasterChef Australia fan, and while watching the show last week I found this dish that I'm curious to try out.
It's made by Chef and MCA Judge Gary Mehigan.
Just when I heard what he was gonna cook I took out a pen and paper..haha
Although it looks simple when he does it, I do wonder ^^
Anyway this dish I'll try to cook next weekend.
I'll skip the carrots but try to get the rest! ^^


Prep Time: 30 minutes
Cooking Time: 2 hours 30 minutes

Ingredients
1 onion, roughly chopped
3 garlic cloves, bruised
2 bay leaves
750ml (3 cups) red wine
300ml port
1kg piece beef brisket
70ml olive oil
1kg beef neck bones, chopped into small pieces
500ml (2 cups) good quality veal stock
Salt and pepper, to taste

Vegetables:
50ml olive oil
2 large carrots, peeled, cut into large pieces
200g smoked kaiserfleisch or belly bacon, cut into thick lardons
1 large celeriac, peeled, cut into wedges
3 thyme sprigs, leaves picked
2 bay leaves
2 garlic cloves, thinly sliced
50g butter
Parsley leaves, to garnish
Salt and pepper, to taste


How to cook
1 Place onion, garlic, bay leaves, red wine, and port in a large saucepan, bring to the boil over high heat, then remove from heat and set aside to cool completely. Once cool, place beef into a large bowl, the pour in marinade to cover. Refrigerate overnight or up to 24 hours to marinate.

2 Preheat oven to 250C.

3 Heat 1 tablespoon olive oil in a large frying pan over medium-high heat. Cook bones for about 10 minutes until caramelised, turning occasionally. Season with salt.

4 Meanwhile, drain beef brisket from marinade and pat dry well with paper towel, reserving vegetables and liquor.

5 Heat remaining 50ml oil in a large, heavy-based saucepan set over high heat. Sear brisket on all sides until caramelised. Add reserved vegetables from the marinade, and remove brisket. Set aside. Add bones to dish, followed by the marinade. Bring to the boil and reduce by half. Return brisket to pan with stock, and bring to the boil. Cover with a lid, then place in oven. Immediately reduce temperature to 160C. Cook for 1.5-2 hours, depending on thickness of beef, until tender. Season carefully as flavour will develop throughout the cooking process.

6 Meanwhile, for the vegetables, heat oil in a large frying pan over medium-high heat. Add carrots, kaiserfleisch and celeriac and lightly season with salt and pepper. Reduce heat to medium, and cook for about 6-8 minutes until golden and caramelised, stirring often. Add thyme and bay leaves and cook for a further 5 minutes. Reduce heat to low, then add garlic and butter. Continue cook for a further 15 minutes or until vegetables are tender, basting occasionally.

7 Remove pan from oven. Carefully remove brisket and bones from pan. Strain sauce through a fine sieve lined with a muslin or chux cloth into a clean pan, and gently warm through.

8 To serve, carve beef lengthwise, across the grain into thick slices and arrange in a serving platter with vegetables.
Garnish with parsley leaves and serve with jus.

Masterchef AUS


I think most of you know what Masterchef is.
I have watched the US, UK, SWE and AUS versions.
All I can say, the only one I have followed, season to season is the Australian one.
There's something about the Aussie one. I like the judges a lot, There's something about Gary Mehigan,George Calombaris, and Matt Preston. They are the ones that make the show so great!
And I'm always excited to see a new episode!!

I think my fave season was Season 2, followed by season 5. ^^
I liked a lot of the participants in Season 2 in general. And for season 5, what can I say but Daniel Churchill was nice to look at...hahaha

This is me

I got so excited when Ian posted this on his Facebook! I cannot wait to read it, then again I need to get a copy first ^^
Ian Thrope is my fave swimmer, all time...!! I used to follow him competitions like a maniac, that is infront of the TV!! ^^
Also I read the book back in 2004 made by an author, who had interviewed him! I even got it signed as my "big sis" lives in Aussie!!
Anyway back to the autobiography, this time it's written by himself!! And I guess there will be lots more to be told to his life!! Got to find it online, amazon maybe?! ^^
